CINNAMON DATE CASHEW ICE CREAM

I always feel better about eating homemade ice cream over anything store bought because the ingredients are far fewer and more pure. It's a lot easier to make than you might think using only a high-powered blender, no ice cream maker required.


I'm not a fan of homemade vegan ice creams that use bananas because the flavor always ends up coming through and it really doesn't taste like ice cream to me. This is why I make mine without a single banana and the result is a super creamy, sweet dream that rivals any dairy option. I actually plan on serving this to an unsuspecting person to see if they notice it's not traditionally made ice cream.


INGREDIENTS

• 1 1/2 cups oat milk

• 1 cup dates, pitted

• 1 cup raw cashew butter

• 1 teaspoon salt

• 1 teaspoon vanilla extract

• 1/2 teaspoon cinnamon


I highly recommend using *raw* cashew butter over roasted cashew butter for a better taste and a better color of the finished product. Raw nut butters are also obviously less processed and therefore have more of their nutritional benefits in tact.


DIRECTIONS

Place all the ingredients in a high-powered blender and blend until the mixture is completely smooth.


Pour the contents of the blender into a container (I use this handy ice cream storage tub). Cover your container and place in the freezer to firm up overnight or at least 5-6 hours.


Once in a solid frozen state, scoop and enjoy. Serve with a little cacao drizzle, a sprinkle of cinnamon, or my personal favorite, plain because it's that good on its own and really doesn't need anything.


Feel free to stir in any add-ins to the mixture before pouring in the container and freezing. Some options include chocolate chips, chopped nuts, homemade cookie dough bites, vegan caramel, sprinkles, crushed cookies, and more.


This ice cream is truly addicting after one spoonful with the irresistible combination of creamy and cold. There's a subtle sweet and salty taste to it that's almost reminiscent of a salted caramel ice cream but without the heaps of refined sugar, artificial flavors, additives, and dairy wreaking havoc on your system.
