CHOCOLATE COVERED PUFFED MILLET CRISPY TREATS

These are a healthier take on the classic rice krispy treat. They contain whole grains and fiber from the puffed millet & brown rice cereal, healthy fats from the cashew butter & coconut butter, antioxidant-rich cacao butter, minerals like manganese & zinc from the maple syrup and mood-boosting benefits from the dark chocolate.

 

INGREDIENTS

2 cups puffed millet cereal

2 cups brown rice crisp cereal

2/3 cup cashew butter

1/2 cup cacao butter

1/2 cup maple syrup

1/3 cup coconut butter

1 teaspoon vanilla extract

1/2 teaspoon sea salt

4 oz dark chocolate*

*I use 2 Hu Simple Dark Chocolate bars

INSTRUCTIONS

In a saucepan, combine the cashew butter, cacao butter, and coconut butter.

Heat over low-medium heat, stirring continuously until the ingredients are fully melted and well combined.

Add the maple syrup, vanilla extract, and sea salt to the melted mixture and stir until everything is thoroughly mixed then remove the saucepan from the heat.

Stir in the puffed millet cereal and brown rice crisp cereal and gently mix until evenly coated.

Line a 9x9 baking pan with parchment paper, leaving some overhang for easy removal. Transfer the cereal mixture to the pan and press it down firmly to create an even layer.

Place the pan in the refrigerator and let it chill for at least 1 hour or until the mixture has firmed up and hardened.

Once fully set, use the parchment paper overhang to lift the hardened mixture from the pan. Place it on a cutting board and slice into squares or use a cookie cutter to cut desired shapes.

Melt the dark chocolate, drizzle over the treats and return them to the fridge until the chocolate hardens.

To maintain the texture of the bars, I recommend storing them in an airtight container in the refrigerator.
